If you are looking for a super easy meal, then this is the meal for you. You can make this meal a little more special if you make your favourite homemade barbecue sauce.
With the start of school and extra activities in the evening, were always scrambling for a super easy meal in our household. Just place your chicken in the bottom of your slow cooker and top with some barbecue sauce. My slow cooker came with a rack, so for this meal, I used the rack to add some vegetables to the slow cooker as well and this became a one pot meal.
Slow Cooker Barbecue Chicken
6-8 pieces of your favourite chicken (drumsticks, wings, thighs, etc)
1/4 – 1/2 cup of your favourite barbecue sauce
4 potatoes, cubed
2-4 cup of your favourite vegetables (cut into bite sized pieces)
Layer your chicken into the bottom of the slow cooker and top with the barbecue sauce. If you have a rack for your slow cooker, place it in the slow cooker.
Top your vegetable on top of the rack.
Cook on low for 6-8 hours, until the chicken and vegetables are done.
If you would like to crisp up the skin on your chicken, place it under the broiler for a few minutes until crisp.
