I have to admit, I love the idea of making dinner in a crockpot but my crockpot never seems to leave the dark back corner of my kitchen cabinets. I’ve never been happy with the quality of the meal that results after waiting for hours. I was determined to create something in my crockpot that tasted fantastic and I think I have finally accomplished that. Tender beef with a tangy orange ginger sauce is the result and it’s well worth the wait.
Ginger Orange Beef and Broccoli
1 lb of stewing beef, cut into strips
1 cup of orange juice
1/2 cup of pineapple juice
1/4 cup of low sodium soy sauce
2 tablespoon of oyster sauce
1 teaspoon of sesame oil
1/4 cup of fresh grated frozen ginger (**a great trick I have learned is to freeze your ginger, skin on and then it’s easier to grate)
1 tablespoon of cornstarch
1 bunch of broccoli, cut into small florets (stems can be used if thinly sliced)
1 cup of your favourite rice
Pile the beef, orange juice, pineapple juice, soy sauce, oyster sauce, sesame oil and ginger into the insert of your crockpot. Mix well, ensuring that all of the pieces of beef are coated with the delicious sauce.
Cook for at least 4 hours on low to make sure that the beef is juice and tender. At this point, gently stir in the cornstarch, mixing well before adding in the broccoli pieces and cook for another 30 minutes until the broccoli s slightly tender but still crunchy.
Meanwhile, prepare the rice according to package directions. Spoon piles of beef, broccoli, and sauce on top of the rice and serve.
If you want some extra crunch, add some peanuts or cashews on top. Enjoy!
