Happy Earth Day! I woke up to some beautiful sunshine coming in through my bedroom windows this morning, what a great day.
I wanted something a little special for breakfast today, so I whipped up a batch of my five minute banana bread oatmeal. Make sure that your banana is nice and ripe with some brown spots, this will add lots of natural sweetness to your bowl of oatmeal.
Banana Bread Oatmeal
1/2 cup of quick cooking oatmeal
1/2 cup of water
1/2 cup of nut milk (I prefer to use vanilla soy milk)
1/4 cup of raisins
1 mashed ripe banana
1/2 teaspoon of cinnamon
1 tablespoon of flax meal
1 tablespoon of maple syrup
1/4 cup of chopped walnuts
Mix the oatmeal, water, nut milk and raisins together in a microwave safe bowl. Cook on high for 1 minute 30 seconds to 2 minutes depending on the consistency you prefer, 2 minutes will give you a thicker oatmeal. Stir in the mashed banana, cinnamon, flax, maple syrup and top with the chopped walnuts. Enjoy!
