This has to be one of the easiest meals to prepare, if you are looking for a meal that you can throw together in 15 minutes, this is it. You just stir together the sauce, chop some vegetables, pour some boiling water over your noodles and toss. This is a go-to meal for me when I get home from work and need something that is very little effort and tastes great.
Peanut Sesame Noodles
Serves: 4-6
For the sauce:
2 tablespoons of peanut butter
1/4 cup of freshly grated ginger
1 tablespoon of honey
2 tablespoons of soy sauce
1 teaspoon of sesame oil
1 teaspoon of rice vinegar
1 teaspoon of oyster sauce
1/4 cup of water
To Assemble:
200g of vermicelli noodles (rice or the ones pictured are made from peas)
1 tablespoon of canola oil
4 freshly sliced mushrooms
20 snow peas, cut in half
2 medium freshly sliced carrots
1/2 freshly chopped bok choy
1/2 freshly sliced green pepper
1/2 cup of cashew or your choice of nut
Stir the sauce together and set aside. Prepare the noodles according to the package directions (vermicelli noodles usually just have boiling water poured over them). Heat the oil in a large skillet over med-high heat. Toss in the vegetables and stir fry for just a minute or two to soften the vegetables. Pour in the sauce and toss in the noodles, stirring to coat and combine. Serve and enjoy!
