It has been quite a few warm days around here lately so I have been designing meals that require very little cooking. Beef tacos are always on my list because they only take a few minutes on the stove top. Dixon Farms ground beef is the star of this quick and easy meal, this week, I only had one pound of ground beef left, so I had to throw in a few black beans to the mix. Feel free to use all ground beef if you have enough.
1 lb. of lean ground beef
2 cups of black beans (or 2 lbs. of ground beef)
1 cup of diced tomatoes or tomato puree
1-2 tbsp. of homemade taco seasoning
Start by browning your beef in a non-stick pan over medium heat. After a few minutes, add your beans and begin to slightly mash the beans with the back of a large spoon. Pour in your tomatoes and taco seasoning. Continue cooking for another 5-10 minutes until the liquid from the tomatoes begins to thicken the mixture.
Top your tacos with your choice of toppings and enjoy!
