Jen & Derek’s Organic Farm: Quick Sauteed Vegetables

If you’re looking for a quick, easy and delicious side dish you should give this a try.  I love to saute fresh vegetables in just a little butter on the stove top instead of boiling them.  Sauteing vegetables leaves the vegetables nice and crisp and full of flavour.  This week I decided to use up the beautiful carrots and yellow beans.  I also had some fresh dill hanging around from last week’s veggie delivery so in that went too.  Just a pat a butter, your vegetables, and your choice of fresh herb and you have a quick and easy side dish fit for any meal.14668989877_e105b93740_z

Sauteed Vegetables in butter with Fresh Herbs

1 tablespoon of butter
2-4 cups of your favourite vegetables, cut into bite-size pieces
a few handfuls of your favourite fresh herb
lots of fresh pepper
1/4 teaspoon of salt

Begin by melting your butter in a large saute pan that is fitted with a lid over medium heat.  If you don’t have a pan with a lid, just use some tin-foil.  Once your butter is melted and your pan is preheated, toss in your vegetables.  Give them a quick stir to cover each one with a little butter.  Cover the pan with a lid and continue to cook for about 10-15 minutes.  You may cook them a little longer or shorter depending on your preferences and the type of vegetables you use.  Just keep an eye on them and test the periodically.  Toss in your fresh herbs, salt and pepper just before serving.  Enjoy!
